HOW WE PACKAGE Our Grass Finished, Lean, Clean Beef

We use the lastest technology for freshness and long lasting quality in your freezer.  The USDA inspected processing facility is a privately owned and operated local business.  The owners personally oversee the quality of each order.  Vacum sealed bags are used with individual labeling for easy storage and use.

Beef Sections:  Your beef section is weighed on USDA certified scales and the final price is based on hanging weight (hw) before packaging.  50% deposit on estimated hanging weight (hw) is your reservation.  The balance is due once it is weighed (estimate used for beef sides is 325 pounds)

HOW MUCH DO I TAKE HOME?

*smaller bone structure - less waste

*lean animal - less carcass waste AND less cooking waste

*option to keep bones for soups, broths, gifts, & pet happiness

*organ meats divided between buyers based on interest & %   of animal purchased

*package the fat for suet, making lard etc.

These increase your total take home product but are not required.  We regularly have experienced our buyers taking home 58-65%(aproximately)of the hanging weight.  When you use more, you take home more!

 STANDARD PROCESSING INCLUDES: vacum sealed & labeled packaging; primary, basic cuts, each package with your name

CUSTOM PROCESSING IS AVAILABLE:  examples: tenderizing, hamburger patties, steaks packaged as singles, etc


ALL LEAN BEEF SHOULD BE COOKED APROX 50 degrees lower than normal; low heat keeps it tender!

"Chef's Variety Selection"

this order includes steaks - t-bone, round, sirloin & boneless ribeye.  A variety of roasts - rump, chuck, & arm.  The 1/2 brisket can be either ground or packaged as a brisket, & soup bones are included.   Grilling Steaks are packaged by 2's.  Round steaks are 1 to a package.  Hamburger is in 1 # bags for easy management.

This order appeals to the cook who likes lots of variety!

THE KING'S GRILL

Steaks are 4 to a pack, NO soup bones,
brisket-optional to grind, NO roasts - center cut steak choices from the roasts and the rest is ground.

This selection gives the most hamburger.  This is a rich, steak burger quality - perfect for the grill - juicy without being fatty.

The Queen's Grill

Steaks are 2 to a pack, includes soup bones, brisket-optional to grind, 1/2 the roasts are roast in 2-3# wts, the other 1/2 is center cut for steaks, the roast trimmings are
ground creating a steak quality juicy hamburger.  Hamburger is 1# packs.

 

for all: short ribs are optional- reduces the hamburger, long ribs optional - reduces steak cuts
